making bunk beds safe?

I have a set of bunk beds and it is impossible to get the original right size barrel nuts and screws needed to make them safe. (i'm using them a single beds but now impractical).
I am going to use wooden dowels in head/foot boards where the original screws and barrel nuts would of been used, but what else can i put on them to make the absolutely safe for my children aged 12 and 8 years. both girls so hopefully no problems with jumping from top!!

If you use dowels make sure you apply a wood glue of some sort at the least (I'm very fond of a product called gorilla glue) but if you want a more secure but not quite eye catching you should use lag screws and drill the holes out to countersink the heads so the kids don't catch themselves on the heads. You can even plug the holes with dowels so the heads can't be seen.
